Recipe - Thukpa (from Ladakh)

So my husband returned yesterday from Ladakh and he told me about this exquisite and delicately spiced noodle soup which they had as a staple diet throughout the ride. This is what it looks like and I tried to make it today. Here's the recipe: It's quite simple. 1. Boil just a handful of noodles with a bit of salt. 2. Heat oil and add some minced garlic and chopped green chillies. 3. Add a cup of onion. Cook till translucent. Add chopped tomatoes. Cook well. 4. Add veggies of your choice. Cabbage, French beans, mushrooms, cabbage, corn, carrots etc. If you want the non-veg version, add shredded chicken. 5. Saute and let them turn soft. 6. Add garam masala (just a tad pinch), red chilly powder (pinch), black pepper powder, salt and chicken masala (even for the veg version). I also added some Maggi magic masala. 7. Add water and let it boil, like soup. When it's done, add the noodles and top it up with coriander. You can add a spot of vinegar too, if you want a tan...

Try this before u throw out overripe papaya and mash melon

I hate to throw away over ripe fruit and it seems to be happening once to often in my fridge. On Friday I discovered two overripe papayas  as well as musk melon in my fridge and I didn't have the heart to throw them nor the guts to eat them. So I did a bit of googling and found out these amazing recipes for papaya halwa as well as mash melon milkshake. So adding some and deleting some ingredients, I found these recipes that worked for me... Papaya Halwa: Papaya Halwa Ingredients: Ripe Papayas Sugar Ground Almonds (15-20) Elaichi (3) Ghee (2-3 tablespoons) Salt (pinch) Method: 1.Grate/ Cube the papaya 2. Whole wheat pan baked pizza (restaurant ishtyle)

Ever since the day I footed a bill of two and a half thousand at Pizza Hut for about five pizzas only (I paid tax of approx. 600 bucks!!! :-8) I'd decided that I am gonna ace the pizza at home at a fraction of the cost and many many times healthier. It took me a few attempts and disasters but I finally nailed it today. But there's a problem...I don't have an oven. So after some research I discovered that the non stick pan is a decent option to it. So here's the recipe for pizza which tastes almost as good as the one u will get outside. Ingredients: (For the base) 250 gms whole wheat atta (makes 5 bases) Half a pack of blue bird Instant yeast Pinch of sugar Salt, olive oil, water If u want to make it healthier you can add ajwain or ground flax seeds to the dough.
